Fresh cherry, coconut & cassis scones (lactose free)
250g plain flour
7g baking powder
7g bicarbonate of soda
65g caster sugar
40g coconut oil
100ml coconut milk
Fresh or frozen cherries(soaked in cassis cut in halve)
Coconut shavings
Method.....
1.place flour,sugar & oil into a bowl and rub until smooth .
2.now add bicarbonate of soda and baking powder.
3.slowly add in milk and gently mix with hand quickly.
4.form into a square ,now add cherries all over the top & plenty .
5.brush with coconut milk add coconut shavings & caster to cover .
6.form into 8 small square scones bake @190c 12-15 minutes.
Serve with cherry jam..
